Ingredients

Units Scale

Hawaiian Pineapple Pork Chops

Egg Fried Rice

  • 2 1/2 cups cooked rice, preferably chilled overnight
  • 1/2 cup frozen peas
  • 1/4 cup diced frozen carrots
  • 3 eggs, lightly beaten with a drop of water, salt and pepper
  • 4 slices cooked ham, diced, or an equivalent amount of cooked chicken, beef, pork or shrimp
  • 3 spring onions, chopped
  • 1 1/8 cups – 100 g bean sprouts
  • 1 tsp salt, or to taste
  • 1 tsp light soy sauce
  • 1 tsp sesame oil
  • 1/2 tbsp cooking oil, plus a little extra if needed

Turmeric Mashed Potatoes

  • 4 to 5 potatoes, peeled and washed
  • 1 chicken or vegetable stock cube
  • 1/2 tsp turmeric
  • 1 tbsp white onion soup powder
  • 1 tsp salt, or to taste
  • 2 tsp lemon black pepper
  • 4 tbsp butter
  • Approximately 1 1/2 cups milk and cream combined, warmed slightly if possible

Instructions

Hawaiian Pineapple Pork Chops

  1. Whisk together the 2 crushed garlic cloves, 1 tbsp Shaoxing rice wine or apple cider vinegar, 1 cm grated ginger, 1/2 cup pineapple juice, 1/4 cup soy sauce, 1 tsp kosher salt and 1/2 tsp crushed black pepper in a bowl.
  2. Add the 4 pork loin chops and turn them until they’re coated all over. Cover and refrigerate for 1 hour, turning them once if convenient. Keep the 4 pineapple slices separate for grilling.
  3. Preheat the oven to 350⁰F (180⁰C). Arrange the marinated pork chops in a baking dish and pour the marinade around them.
  4. Bake for approximately 30 minutes, turning the chops and basting them halfway through. Since pork chops vary in thickness, check their internal temperature with a meat thermometer. Pork should reach 145⁰F (63⁰C), followed by a 3 minute rest. Thicker chops may need additional cooking time.
  5. Heat a cast iron griddle pan over medium high heat. Grill the 4 pineapple slices for a few minutes on each side until they’re nicely charred and caramelized. Alternatively, place them over the pork chops during the last 10 to 15 minutes of baking.
  6. Let the pork chops rest for 3 minutes before serving. If you’d like extra sauce, transfer the cooking juices to a small saucepan and bring them to a full boil before serving. Don’t use leftover raw marinade as a sauce without boiling it thoroughly.

Egg Fried Rice

  1. Heat 1/2 tbsp cooking oil in a wok or large frying pan over medium high heat. Add 1/2 cup frozen peas and 1/4 cup diced frozen carrots with a pinch of salt. Stir fry for 2 to 3 minutes, until heated through.
  2. Add the 4 diced slices of cooked ham, or your chosen cooked chicken, beef, pork or shrimp. Stir for another minute to warm everything through.
  3. Add 2 1/2 cups chilled cooked rice. Break up any clumps with your spatula and stir fry for 2 to 3 minutes, until the grains are hot. Transfer the mixture to a bowl.
  4. Add the 100 g bean sprouts to the wok and stir fry for about 1 minute. Remove them and set aside with the rice mixture.
  5. Pour in the 3 lightly beaten eggs. Let them begin to set, then gently draw the cooked egg towards the centre with your spatula. Scramble until just cooked.
  6. Return the rice, vegetables, meat and bean sprouts to the wok. Add 1 tsp salt, adjusting to taste, and 1 tsp light soy sauce. Toss everything together until evenly mixed and piping hot.
  7. Drizzle over 1 tsp sesame oil, add the 3 chopped spring onions and toss once more. Serve immediately while the rice is hot and fluffy.

Turmeric Mashed Potatoes

  1. Cut the 4 to 5 peeled potatoes into quarters. Place them in a pot of cold water, add the 1 chicken or vegetable stock cube and 1/2 tsp turmeric, then bring to a boil.
  2. Reduce the heat and simmer for approximately 15 to 20 minutes, or until the potatoes are fork tender. Drain thoroughly and return them to the warm pot for a minute to let excess moisture evaporate.
  3. Mash the potatoes until most of the lumps are gone. Add 1 tbsp white onion soup powder, 1 tsp salt, 2 tsp lemon black pepper, 4 tbsp butter and about half of the 1 1/2 cups milk and cream mixture.
  4. Use an electric hand mixer on low speed to blend the potatoes, gradually adding more milk and cream until you reach your preferred smooth consistency. Stop as soon as they’re creamy. Overmixing can make mashed potatoes gluey.
  5. Taste and adjust the salt and pepper if needed. Keep the potatoes covered and warm until you’re ready to serve.
  6. Serve each pork chop with a slice of charred pineapple, a generous scoop of egg fried rice and a helping of buttery turmeric mashed potatoes. Spoon a little of the cooked pan sauce over the pork if desired.

Additional Information, Tips and Suggestions

  • Choose pork chops of similar thickness: They’ll cook more evenly, making it easier to serve tender, juicy meat.
  • Keep the marinating time to about 1 hour: Fresh pineapple juice contains enzymes that can soften meat. Longer exposure may affect the texture.
  • Grill the pineapple separately: This encourages caramelization and helps the slices develop attractive char marks.
  • Use chilled rice: Day old rice gives the best fried rice texture. Break up clumps before adding it to the wok.
  • Cook the eggs separately in the wok: Scrambling them before mixing them through the rice helps distribute the egg evenly.
  • Avoid gluey mashed potatoes: Drain them thoroughly and add the milk and cream gradually. Stop mixing as soon as they’re smooth.
  • Taste before adding extra salt: Soy sauce, ham, stock cubes and onion soup powder already contribute saltiness.
  • Coordinate the cooking: Bake the pork while preparing the potatoes and fried rice so everything is ready close together.
  • Serve the sauce safely: If you want to use the pork marinade as a sauce, bring it to a full boil first. Never serve it straight from the bowl that held raw pork.
  • How long can leftovers be stored?
    • Refrigerate cooked pork chops, fried rice and mashed potatoes in separate airtight containers for 3 to 4 days.
    • Refrigerate cooked food within 2 hours. Cool rice particularly quickly and safely.
    • Reheat leftovers until steaming hot throughout. Reheat only the portion you plan to eat.
  • Can the meal be frozen?
    • Yes. Freeze the components separately for better results.
    • Pork chops: up to 2 to 3 months for best quality.
    • Egg fried rice: up to 1 month for best texture.
    • Turmeric mashed potatoes: up to 2 months.
    • Thaw in the refrigerator and reheat thoroughly. The texture of the rice and potatoes may change slightly after freezing.
  • Substitutes
    • Pork chops: Bone in or boneless chops both work. Adjust cooking time for thickness.
    • Shaoxing rice wine: Substitute apple cider vinegar or rice vinegar.
    • Pineapple juice: Unsweetened canned pineapple juice works if fresh juice isn’t available.
    • Soy sauce: Use reduced sodium soy sauce or gluten-free tamari if preferred.
    • Ham: Substitute cooked chicken, beef, pork or shrimp. Firm tofu is suitable for a meat-free rice option.
    • Bean sprouts: Replace with finely shredded cabbage or omit them.
    • Spring onions: Use chopped chives for a milder onion flavour.
    • Stock cube: Chicken or vegetable stock cubes work in the mashed potatoes.
    • White onion soup powder: Substitute 1 to 2 tsp onion powder, adjusting the flavour to taste.
    • Milk and cream: Use milk alone for a lighter mash, or use unsweetened plant-based milk and dairy-free butter.
  • Can I use freshly cooked rice? Yes, but chilled rice generally fries better. If cooking rice specifically for this recipe, spread it in a shallow container and cool it promptly. Refrigerate it within 2 hours rather than leaving it at room temperature.
  • Can I grill the pork chops instead of baking them? Yes. Grill over medium heat, turning as needed, until the thickest part reaches 145⁰F (63⁰C). Rest for 3 minutes before serving.
  • How can I prevent dry pork chops? Use a meat thermometer, avoid overcooking and let the pork rest before serving. Chop thickness affects cooking time, so temperature is a more reliable guide than the clock.
  • Can I prepare the meal in advance? You can prepare the marinade, chop the vegetables and cook and chill the rice ahead of time. For the best texture, grill the pineapple close to serving and make the fried rice shortly before dinner.
  • Is this dish spicy? No, the recipe uses black pepper rather than chili. Add a pinch of chili flakes if you’d like a little heat.
  • What if the turmeric mash is too thick? Gradually mix in a little more warm milk or cream until the potatoes reach your preferred consistency.
  • What if the marinade tastes too salty? Use reduced sodium soy sauce next time and avoid adding extra salt until the pork has cooked. The sweetness of the pineapple helps balance the savoury ingredients.
