You have to try these easy, Healthy Mixed Berry And Seed Muffins, you will be so happy and can thank us later
Ingredients
- 4 tbsp coconut flour
- 4 tbsp flaxseed flour
- 4 tbsp flax seeds / linseeds
- 4 eggs
- 2 tsp psyllium husk
- 3 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup xylitol
- 1/4 cup milk
- A crack of Himalayan pink salt
- 80g mixed berry and seed snack pack (mine has dried cranberries – dried blueberries – sunflower seeds & pumpkin seeds)
- 1/4 cup sultanas
- 1/2 cup desiccated coconut
Method:
- Mix everything (except the mixed berries – sultanas and coconut) in a food processor.
- Stir in the rest
- Pour into muffin tins and bake at 200C till the tops are firm and the muffins are brown.
