Healthy Mixed Berry And Seed Muffins

Ingredients

  • 4 tbsp coconut flour
  • 4 tbsp flaxseed flour
  • 4 tbsp flax seeds / linseeds
  • 4 eggs
  • 2 tsp psyllium husk
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup xylitol
  • 1/4 cup milk
  • A crack of Himalayan pink salt
  • 80g mixed berry and seed snack pack (mine has dried cranberries – dried blueberries – sunflower seeds & pumpkin seeds)
  • 1/4 cup sultanas
  • 1/2 cup desiccated coconut
Healthy Mixed Berry And Seed Muffins

Method:

  1. Mix everything (except the mixed berries – sultanas and coconut) in a food processor.
  2. Stir in the rest
  3. Pour into muffin tins and bake at 200C till the tops are firm and the muffins are brown.
