Ingredients for the best Healthy Shrimp Florentine Zoodles:
- 1 Zucchini cut into noodle shape strands
- 1 bunch of spinach
- 6 cloves of garlic minced, divided
- 1 small spring onion chopped
- 2 tablespoon olive oil divided
- Large shrimps ¼ cup deveined and cleaned
- ½ tsp red pepper flakes
- ½ tsp black pepper
- 1 tsp lemon juice
- Salt to taste
In a pan heat oil, and add garlic and zucchini. Cook in high heat till these are soft. Transfer to a bowl.
Heat oil, and add garlic, onion, and shrimp. Cook till shrimps are pink and almost cooked.
Add salt, pepper, and spinach. Cook till these are wilted.
Now add the cooked zucchini and stir well until everything is cooked.
Add lemon juice. Transfer to a serving bowl.
Serve immediately pairing with your choice of bread.
