  • Can this be frozen? Yes. Hearty Chicken Broth Bowl can be frozen, although the potatoes may become slightly softer after thawing and reheating. For the best texture, cool the broth completely, transfer it to airtight freezer-safe containers, and freeze for up to 3 months. If you know you’re planning to freeze some, you could also cook the broth without the potatoes and add freshly cooked potatoes when reheating.
  • How long can it be stored and how? Store the leftover Hearty Chicken Broth Bowl in an airtight container in the refrigerator for 3 to 4 days. Cool the soup promptly after cooking and refrigerate it within 2 hours. When reheating, heat it thoroughly until piping hot. Only reheat the amount you plan to eat rather than repeatedly reheating the entire pot.

Ingredient substitutions

  • Chicken: Use bone-in chicken pieces for a richer, more flavourful broth. Boneless chicken thighs or breasts can also be used, but they may cook a little faster.
  • Cinnamon sticks: Use 1/2 tsp ground cinnamon if you don’t have cinnamon sticks. Add it directly to the broth, but use it sparingly so the flavour doesn’t become too strong.
  • Cardamom pods: Use 1/4 tsp ground cardamom in place of the 4 cardamom pods. The flavour will be slightly more concentrated.
  • Fresh ginger: Use 1/2 tsp ground ginger if fresh ginger isn’t available. Fresh ginger gives the broth a brighter flavour, but ground ginger works well in a pinch.
  • White pepper: Substitute with 1/2 tsp freshly ground black pepper. The flavour will be a little more pronounced.
  • Turmeric: You can leave the turmeric out if needed. It adds lovely colour and a mild earthy flavour, but the broth will still be delicious without it.
  • Fennel seeds: Use 1/2 tsp anise seeds for a similar slightly sweet, aromatic flavour. You can also leave the fennel seeds out if you don’t have them, although you’ll miss some of that subtle anise-like flavour.
  • Green chili: Use a pinch of chili flakes, a small jalapeño, or leave it out completely for a milder broth.
  • Carrot: Substitute with parsnip, turnip, or sweet potato. Sweet potato will add a touch of natural sweetness.
  • Potatoes: Use sweet potatoes, baby potatoes, or cauliflower florets. If using cauliflower, add it later in the cooking process so it doesn’t become too soft.
  • Fresh dhania: Substitute with fresh parsley if needed. The flavour will be different, but you’ll still get a lovely fresh finish.
  • Water: For a richer broth, replace some or all of the 1 L water with homemade or low-sodium chicken stock. If using prepared stock, taste before adding extra salt.
