Ingredients
Pastry:
- 140 g Golden Cloud cake flour
- Pinch of salt
- 125 g cold butter
- 125 g smooth cottage cheese (mascarpone works too)
- 1 egg (for egg wash)
Custard Filling:
- 250 ml milk
- 3 large egg yolks
- 50 g sugar
- 25 ml cake flour
- 5 ml vanilla essence
Glaze Icing:
- 100 g icing sugar, sifted
- 2 tsp milk (add a bit more if needed for drizzling consistency)
Instructions
Pastry:
- Sift the flour and salt into a bowl.
- Rub in the butter until it looks like breadcrumbs.
- Mix in the cottage cheese (or mascarpone) to make a soft dough.
- Shape into a disk, wrap in cling film, and chill for 30 minutes.
- Roll out on a floured surface until about 3 mm thick.
- Cut into 5 x 5 cm squares and place on a greased baking tray.
- Brush the tops with egg wash.
- Bake at 180°C for 12–15 minutes, until golden.
- Let cool completely before filling.

- Heat the milk just to a boil, but don’t let it simmer.
