Irene's Apple Cinnamon Crumpets

Ingredients:
1 cup self raising flour
1/4 cup sugar
2 eggs
1/2 to 1 cup milk
1 tsp vanilla essence
1 tablespoons melted butter
1 tsp cinnamon powder
1 grated granny Smith apple (optional)
Method:
Mix all the ingredients (besides apples) together to get a thick, smooth batter (add milk a little at a time to get correct consistency).
Add freshly grated apples & the melted butter to the batter and mix in.
Add a small amount of butter to a non-stick frying pan and drop batter (as big as you like) and cook on medium heat.
When bubbles appear turn and cook the other side.
Serve with syrup of your choice. Enjoy!
