If you love coffee like I do, then this one is for you. Today I’m sharing my secret lamington recipe. Enjoy your weekend 😘
Ingredients
1 cup white Sugar
5 large eggs
1 cup oil
1 tsp caramel essence
3 cups cake flour
3 tsp baking powder
1/2 tsp salt
1/2 cup Milk
1/4 cup boiled water mixed with a tsp strong coffee (cool completely and mix into milk)
Method:
Beat the sugar and eggs together until light and fluffy.
Add the oil and caramel essence, and mix well.
Add sifted flour, baking powder and salt to the egg mixture alternatively with the coffee-milk mix.
Mix ingredients well but don’t over beat.
Bake in greased oven tray at 180 degrees Celsius for +-30 mins or until knife comes our clean when tested.
Cut into squares when completely cool.
Dip in Chocolate-coffee Sauce and roll in desiccated coconut.
Chocolate-coffee Sauce
Ingredients
2 cups brown sugar
3/4 cup cocoa powder
1 cup hot water
1 tsp strong coffee granules (I used Jacobs)
1 tbs butter
1/2 tsp salt
Method:
Place all ingredients (besides butter & salt) in a pot or sauce pan and bring to the boil while stirring.
Remove from heat and mix in butter & salt.
Cool slightly before dipping the cake.
