Overheard my dad talking to my mom about this classic, Traditional Indian dessert, so I just had to make it for him and the family today. The smile on his face was priceless💖
Ingredients:
1 cup basmati rice
2 cups milk
1 can coconut cream
5 elachi (freshly roasted and ground)
A few cinnamon sticks
1 Star Anise
1 can condensed milk
1/2 cup almonds
1/2 cup desiccated coconut
1/2 tsp salt
Method:
Boil rice for 10 in water until bubbling.
Wash thoroughly and return rice to stove.
Add milk, spices, bring to the boil and reduce heat to a low simmer.
One milk is almost completely absorbed into rice and rice is soft, add coconut cream and condensed milk.
Allow to simmer for +- 10 minutes.
Roast coconut and almonds and toss through the sweet rice.
Add more milk if too thick for your liking.
Serve with Braised Kudla*** or on its own.
Braised Kudla ***
Ingredients:
2 tbs butter
1 sliced onion
1/4 tsp jeera seeds
1/4 tsp hing
1/4 tsp dhania jeera powder
1/4 tsp chillie powder
2 dried chillies
1 can chickpeas (rinsed and drained)
Salt to taste
Method
Fry onion and spices in butter on medium heat.
Add chickpeas, crank up the heat and fry until chickpeas are slightly crispy on the outside and browned to your liking.
Serve with sweet rice.
