Jammy Berry Baked Apples

Why You Will Love and Enjoy These Jammy Berry Baked Apples

  • This is the kind of dessert that looks like you made a real effort, even though the oven does most of the work. The apples turn soft and jammy while the berries make a lovely tart sauce for spooning over everything.
  • The apricot jam makes the centres wonderfully sweet and sticky.
  • Golden Delicious apples soften beautifully in the oven.
  • Cinnamon and raisins add familiar comfort without making the recipe complicated.
  • The mixed berry sauce cuts through the sweetness with a lovely tartness.
  • Custard, ice cream or cream all work beautifully for serving.
  • It’s easy to adjust the sweetness of the berries to suit your taste.
  • You can make extra because, honestly, one baked apple is rarely enough.

Additional Information

  • Can I make the apples ahead of time? Yes. Refrigerate cooled apples in an airtight container for 3 to 4 days and reheat gently before serving. Store the berry sauce separately for up to 4 days.
  • Can they be frozen? Yes. Freeze cooled apples and berry sauce separately in airtight containers for up to 3 months. Thaw overnight in the refrigerator and reheat gently before serving. The apples may be slightly softer after freezing.
  • What apples can I use? Golden Delicious works particularly well, but Granny Smith, Pink Lady, Braeburn or another firm baking apple can also be used. Avoid very soft apples, as they may break down too much during baking.
  • Can I use fresh berries instead of frozen? Yes. Use the same amount of fresh mixed berries, but check the sauce sooner as they may cook faster than frozen berries.
  • What can I use instead of apricot jam? Peach jam, apple jelly or another smooth fruit jam works well. Choose a flavour that complements the berries.
  • Can I leave out the raisins? Yes. The raisins add little bursts of sweetness, but they can be omitted without affecting the recipe.
  • Can I use something other than Coke? Diet Coke can be used instead of regular Coke. If you prefer not to use cola, apple juice is a suitable substitute, although the flavour will be slightly different.
  • Can I make the berry sauce without custard powder? Yes. Leave it out for a thinner sauce, or simmer the berries longer to reduce the liquid. For a thicker sauce, use a small cornstarch slurry instead.
  • Why are the apples scored? Scoring around the middle gives the apples room to expand as they bake, helping them open without splitting unpredictably.
  • How do I know when the apples are done? Cooking time varies with apple size and variety. Start checking around 1 hour 15 minutes. They’re ready when a thin knife slides easily into the flesh.
  • How much Coke should I use? Add enough Coke or Diet Coke to reach about 1 cm up the sides of the apples. The exact amount depends on the size of your baking dish.
  • Why is the custard powder mixed with water first? Mixing 1 tbsp custard powder with 2 tbsp cold water creates a smooth slurry that blends into the hot berries without creating lumps.
  • How sweet should the berry sauce be? Start without sugar, taste the hot berries, then add 1 to 3 tbsp sugar if they’re too tart for you.
  • What can I serve with the baked apples? Custard, ice cream or cream are all delicious with the warm apples and mixed berry sauce. The berry sauce is also lovely spooned over ice cream on its own.

Description

These Jammy Berry Baked Apples are soft, fragrant apples baked with apricot jam, raisins, cinnamon, and a splash of Coke or Diet Coke. Spoon the warm mixed berry sauce over the apples and add custard, ice cream or cream if that suits your dinner.

Ingredients

Units Scale

Baked Apples

  • 8 medium apples, preferably Golden Delicious
  • 8 tsp apricot jam, plus 3 to 4 tbsp for the baking dish
  • 1/3 cup seedless raisins, divided
  • 1 tsp ground cinnamon
  • 2 tbsp granulated sugar
  • 1 to 1 1/2 cups Coke or Diet Coke, or enough to reach about 1 cm up the sides of the apples

Mixed Berry Sauce

Instructions

  1. Wash 8 medium apples well and dry them. Remove the cores, making sure you get rid of all the pips without cutting right through the bottom of the apples.
  2. Use a sharp knife to score around the middle of each apple, cutting through the skin but not deeply into the flesh. This gives the apples room to open as they bake instead of splitting unpredictably.
  3. Place the 8 cored and scored apples upright in a Corning or Pyrex baking dish, leaving a little space between each one.
  4. Spoon 1 tsp apricot jam into the centre of each apple, then add 3 to 4 tbsp apricot jam around the bottom of the baking dish.
  5. Divide 1/3 cup seedless raisins between the apples, tucking a few into the jam-filled centres and scattering the rest around the bottom of the dish.
  6. Sprinkle 1 tsp ground cinnamon and 2 tbsp granulated sugar over the apples.
  7. Pour 1 to 1 1/2 cups Coke or Diet Coke into the bottom of the dish, adding just enough to come about 1 cm up the sides of the apples. You don’t want the apples sitting in a deep pool of liquid.
  8. Bake the apples at 350⁰F (180⁰C) for about 1 hour 30 minutes, or until they’re beautifully browned and soft. Start checking them around the 1 hour 15 minute mark because apple size and variety can change the cooking time. A thin knife should slide into the flesh easily when they’re ready.
  9. While the apples are baking, place 3 cups frozen mixed berries in a saucepan over medium heat. Cook, stirring occasionally, until the berries have thawed and the sauce is bubbling gently.
  10. Taste the berries and add 1 to 3 tbsp granulated sugar if they’re too tart for you.
  11. For a thicker berry sauce, stir 1 tbsp custard powder with 2 tbsp cold water until smooth. Stir this mixture into the bubbling berries and cook for another 1 to 2 minutes, stirring constantly, until thickened. Don’t add dry custard powder straight to the hot berries or you may end up with little lumps.
  12. Serve the warm Baked Apples with spoonfuls of the mixed berry sauce. Custard, ice cream or cream are all delicious alongside them, depending on what works for your dinner.
  13. A little kitchen tip: These apples are nicest served soon after baking, while they’re still plump and warm. They can shrivel a little as they sit, but don’t worry, they’ll still taste just as good.

The unexpected ingredient is Coke. It helps flavour the apples as they bake. Would you try it?
