3/4 cup sugar
11/2 cup flour
2 tsp baking powder
3/4 cup milk
Cream butter and sugar till fluffy, add eggs one at a time and vanilla.
Fold in flour with baking powder alternating with milk.
Spoon mixture in muffin tray lined with paper cups.
Bake at 180C for 15 mins
Make a syrup with water and apricot jam. (1 cup water and 1 cup jam or you can add more water if you like)
Heat on stove till combined
When cakes are cooled remove from paper cups and dip in cooled syrup then roll in coconut
Slice in half and sandwich with whipped cream or butter icing
