Years ago I was paging through a magazine in the supermarket queue and saw a recipe for a quick shrimp meal and memorized the ingredients and tried it at home and it has become a favourite when a 10 minute meal is needed.
400 gram cooked and peeled shrimp or prawns
1 bell pepper ( can also use courgette) sliced
spring onion or similar
2 Tablespoons crushed ginger
Teaspoon to Tablespoon of crushed garlic depending on taste
1/8 to 1/4 tsp cayenne pepper and 1/8 to 1/4 tsp curry powder depending on how hot you like you food
1 can (approx 300 g) chopped tomatoes with juice
Use enough olive oil to just coat the bottom of the pan
Sauté ginger, garlic, curry powder and cayenne pepper and add spring onion and bell pepper and sauté for 30 seconds before adding tomatoes.
Toss in shrimp/prawns and allow to simmer for a couple of minutes while you boil the noodles.
Strain the noodles and serve noodles as a bed for the shrimp mixture and a tasty meal in 10 minutes.
