Description
A quick, flavourful meal with tender mini meatballs and fresh ingredients.
These Light and Juicy Mini Meatballs are packed with fresh coriander, grated carrot, green pepper and a little chili for just the right amount of bite. Made with mashed baby potatoes and fresh breadcrumbs, they’re easy to prepare, pan-fried in butter and delicious served with a crisp salad and your favourite sauce.
Ingredients
- 4 heaped tbsp mince of your choice
- Salt and crushed black pepper, to taste
- 2 tbsp fresh coriander, finely chopped
- 2 tbsp carrot, finely chopped or grated
- 2 small baby potatoes, peeled
- 2 tbsp green pepper, finely chopped
- 1 green chili, finely chopped
- 1/2 tsp leaf masala
- 2 tbsp fresh breadcrumbs
- 1 tbsp butter, or as needed for frying
For serving:
- Fresh salad of your choice
- Your favourite sauce or dressing
Instructions
- Peel 2 small baby potatoes, cut them into smaller pieces and boil in water until fork tender. Drain well, mash until smooth and set aside to cool slightly.
- Place 4 heaped tbsp washed and well-drained mince in a mixing bowl. Add salt and crushed black pepper to taste, 2 tbsp chopped fresh coriander, 2 tbsp finely chopped carrot, 2 tbsp finely chopped green pepper, 1 finely chopped green chili and 1/2 tsp leaf masala.
- Add the mashed baby potatoes and 2 tbsp fresh breadcrumbs to the mince mixture. Mix everything until well combined. The mixture should hold its shape when rolled. If it’s too soft, add a little more breadcrumbs.
- Roll the mixture into small, bite-sized meatballs, keeping them roughly the same size so they cook evenly. Lightly dampen your hands if the mixture starts sticking.
- Heat a nonstick frying pan over medium heat and add 1 tbsp butter. Once melted and sizzling gently, add the mini meatballs in a single layer, leaving a little space between them. Cook in batches if needed.
- Turn the meatballs regularly, gently browning them on all sides until cooked through. The cooking time will depend on their size and the type of mince used. If they’re browning too quickly, lower the heat so the centres have time to cook.
- Check that the meatballs are fully cooked before removing them from the pan.
- Serve the warm mini meatballs alongside a fresh, crisp salad and your choice of sauce or dressing.

Additional Information and Tips
- How do I keep the meatballs from falling apart? Mash the potatoes until smooth and drain them well. Mix all the ingredients thoroughly, then add a little extra fresh breadcrumbs, 1 tsp at a time, if the mixture feels too wet to shape.
- How large should the meatballs be? Roll them into evenly sized, bite-sized portions so they cook at a similar rate. Smaller meatballs cook faster, so keep a close eye on them.
- Can I prepare the meatballs ahead of time? Yes. Shape the uncooked meatballs, cover and refrigerate them for up to 24 hours before cooking. Keep them chilled until you’re ready to fry them.
- How long can cooked meatballs be stored? Refrigerate cooled meatballs in an airtight container for 3 to 4 days. Reheat until steaming hot throughout before serving.
- Can I use different types of mince? Yes. Beef, lamb, chicken or turkey mince all work. The flavour and cooking time may vary, so ensure the meatballs reach the appropriate safe internal temperature.
- What can I use instead of fresh coriander? Fresh parsley is a good substitute, although it has a milder and slightly different flavour.
- Can I leave out the green chili? Absolutely. Omit it for a milder version or remove the seeds to reduce the heat while retaining some chili flavour.
- Can I use regular potatoes instead of baby potatoes? Yes. Any suitable potato will work. Peel, boil, drain and mash until smooth before adding it to the mixture.
- What is leaf masala? Leaf masala can refer to a seasoning blend, and its ingredients may vary. If you don’t have the particular blend used in the original recipe, substitute a mild masala seasoning to taste.
- What can I serve with these mini meatballs? A fresh green salad, sliced cucumber, tomatoes, coleslaw or steamed vegetables all work well. Add a yogurt dressing, chutney or your favourite dipping sauce.
- Can I make a larger batch? Yes. Multiply the ingredients proportionally to feed more people. Cook the meatballs in batches rather than overcrowding the frying pan, so they brown evenly and cook through.
- How can I prevent the meatballs from becoming dry? Avoid overmixing the mince and don’t cook the meatballs over excessively high heat. Turn them gently and lower the heat if the outsides brown too quickly.

Juicy Mini Meatballs with Fresh Salad are an easy, flavourful meal with tender centres, fresh herbs and a gentle touch of spice. The mashed potatoes help create a soft texture, while the crisp salad adds freshness to every bite. Ready in just 30 minutes, they’re a delicious choice for a quick lunch or dinner without spending too much time in the kitchen
