Description
Are you looking for a low-carb breakfast option? These Keto Almond Cream Cheese Pancakes are just what you need!
Ingredients
- 7 g Butter (1/2 tbsp)
- 20 g Almond Flour (3 tbsp)
- 2 medium Eggs
- A dash of Ground Cinnamon
- 30 g Cream Cheese, 34% fat (2 tbsp)
- 3 drops Stevia Liquid
- 2 g Psyllium Husk Powder (2 tsp)
- 2 drops Vanilla Extract
- 25 g Raspberries (1/5 cup)
Instructions
- Beat egg/eggs with 2 tbsp of water and room temperature cream cheese until well combined with no lumps with a handheld mixer.
- Stir in almond flour, ground cinnamon, stevia liquid, vanilla extract, and psyllium husk powder.
- Let the mixture sit for 10-15 min to thicken up.
- Melt butter in a frying pan over medium heat.
- Use 2 tbsp of batter for each pancake.
- Fry the pancakes for 3–4 minutes per side, or until bubbles appear.
- Then flip and cook for 1–2 minutes on the other side.
- Repeat the process until all the batter is used.
- Serve on a plate and top up with a side of raspberries.
