Description

They said waffles had to be sweet. We said, “Hold my cheese.” Keto cheddar waffles, anyone?


Ingredients

Units Scale
  • 1 medium egg
  • A pinch of salt and pepper
  • 2 tablespoons almond flour (12g)
  • 1/3 teaspoon baking soda
  • 1 clove of garlic, minced
  • 4 small cherry tomatoes (40g)
  • 1 sprig of parsley, chopped
  • 1 teaspoon olive oil (6g)
  • 1/4 cup grated cheddar cheese (30g)

Keto Cheddar Cheese Waffles with Tomatoes


Instructions

  1. Get your waffle iron hot. You don’t want to pour batter into a cold iron. 
  2. In a bowl, whisk the egg like your life depends on it.
  3. Add the grated cheese, almond flour, garlic, and baking soda.
  4. Mix it up until it looks smooth-ish.
  5. Season with salt and pepper because bland waffles are a crime.
  6. Heat a little olive oil in the waffle iron.
  7. Don’t skip this step unless you want a waffle-removal nightmare.
  8. Pour some batter into the iron, close the lid, and let it cook for 2–3 minutes.
  9. You’re aiming for golden, crispy perfection. Repeat until you’re out of batter.
  10. While the waffles are doing their thing, heat the rest of the olive oil in a pan.
  11. Plate the waffles, top with those gorgeous tomatoes, sprinkle some parsley on top, and then devour.
