Description
These Keto Ham Cups with Baked Eggs are a handy little meal when you want something savoury, filling and easy to grab. Enjoy them for breakfast, tuck one or two into your day as a snack, or serve them when you don’t feel like sitting down to a full meal.
Ingredients
Ham and Egg Cups
- Coconut oil or lard, for greasing the muffin tin
- 6 ham slices, at least 4 in (10 cm) in diameter
- 6 large eggs
- 1/4 tsp sea salt, or to taste
- Ground black pepper, to taste
- Chopped chives, for garnish
Basil Mock Hollandaise (optional)
- 1 cup full fat egg mayonnaise made with olive oil or another keto suitable oil, without soybean or seed oils
- 1/2 cup shredded fresh basil leaves
Instructions
- Preheat your oven to 400⁰F (200⁰C). Lightly grease 6 large muffin tin cups with coconut oil or lard. Use a jumbo muffin tin if needed to accommodate the ham slices and eggs.
- Press 1 ham slice into each greased muffin cup, shaping it gently to form a little nest. If the ham overlaps slightly, that’s perfectly fine. Make sure there’s enough room for the egg.
- Crack 1 large egg into each ham cup. Sprinkle the eggs with 1/4 tsp sea salt divided between the cups, or season to taste, then add ground black pepper.
- Bake for 12 to 15 minutes, checking at the 12 minute mark. The egg whites should be set, while the yolks can remain runny if that’s how you like them. Leave them in a little longer if you prefer firmer yolks. Oven temperatures and egg sizes can affect the timing.
- While the eggs bake, make the basil mock Hollandaise if you’re using it. Add 1 cup full fat egg mayonnaise and 1/2 cup shredded fresh basil leaves to a blender. Blend until smooth and creamy. It’ll turn a lovely green colour, which is exactly what you’re after.
- Let the ham cups rest for 1 to 2 minutes before carefully lifting them from the muffin tin. Garnish with chopped chives and serve with 1 tbsp basil mock Hollandaise per cup, if desired.
- Serve 3 cups per person for a hearty breakfast, or enjoy 1 or 2 when you just want a little something to tide you over.
Additional Information, Substitutions and Helpful Tips
- What size muffin tin should I use? A large or jumbo muffin tin works best for ham slices measuring at least 4 in (10 cm) across. If your ham slices are smaller, a standard muffin tin may work. Grease each cup well with coconut oil or lard to help prevent sticking.
- How do I know when the eggs are cooked? Begin checking at 12 minutes. The whites should be set, while the yolks can remain runny if preferred. Allow extra time for firmer yolks. Oven temperatures, egg sizes and muffin tin materials can affect the cooking time.
- Can I use a different type of ham? Yes. Thin deli ham works well for shaping into cups, while thicker cooked ham can be used if it fits the muffin tin. Handle thin slices gently to avoid tearing.
- Can I replace the basil mock Hollandaise? Absolutely. The sauce is optional, and the ham and egg cups taste good without it. For another flavour, use fresh parsley or chives in the mayonnaise. You can also serve the cups with a little sour cream, although this changes the flavour and nutritional profile.
- What mayonnaise should I choose for keto? Choose a full-fat mayonnaise that fits your dietary preferences. If you’re avoiding soybean and seed oils, check the ingredient label and select one made with an oil you prefer, such as olive oil. Avoid sweetened dressings if you’re keeping carbohydrates low.
- Can I add cheese or vegetables? Yes. A little grated cheddar or Parmesan can be added before baking. Finely chopped cooked mushrooms, spinach or peppers can also work, but avoid adding too much moisture, as it can affect the texture of the eggs.
- How should I season the cups? Start with 1/4 tsp sea salt divided among the six cups, then add ground black pepper to taste. Ham and mayonnaise can already be salty, so adjust the seasoning to suit your ingredients.
- Can I prepare these ahead? Yes. Bake the ham and egg cups in advance, cool them promptly and refrigerate them in an airtight container. Reheat individual portions until piping hot. Store the basil mayonnaise separately and add it just before serving.
- How long will leftovers keep? Refrigerate cooked ham and egg cups within 2 hours and use them within 3 to 4 days. Keep the sauce refrigerated according to the mayonnaise’s storage instructions. For the best flavour, use the freshly blended basil mayonnaise promptly.
- How many cups should I serve per person? The recipe makes six cups, or two servings of three cups each. Serve fewer for a light snack or adjust the portions to suit individual appetites.
- Are these suitable for a keto diet? They can fit into many low-carb eating plans, but the exact carbohydrate content depends on the ham, mayonnaise and any additions. Check product labels and calculate the nutrition using the ingredients you actually use.
- How can I stop the cups from breaking when I remove them? Grease the muffin tin thoroughly, press the ham gently into each cup and let the cooked eggs rest for 1 to 2 minutes before lifting them out with a small spatula or spoon.
- Is the basil mock Hollandaise a traditional Hollandaise sauce? No. It’s a quick, uncooked mayonnaise-based sauce blended with fresh basil. It gives you a creamy, herby topping without the extra steps required for traditional Hollandaise.

Keto Ham Cups with Baked Eggs offer a savoury, low-carb option for breakfast, lunch or a quick snack. With tender ham, baked eggs and a fresh basil mayonnaise topping, they’re easy to prepare, simple to portion and flexible enough to suit different appetites. Make a batch and enjoy them warm, with the eggs cooked just the way you like them.
