Gathering Ingredients for Keto Delights
To kick off these Keto Zucchini Fritters and Green Salad, you’ll need zucchini, almond flour, psyllium husk, cheddar cheese, sour cream, olive oil, and lemon juice. Zucchini keeps carbs low, while almond flour and psyllium husk boost fiber essential for a keto diet. Cheddar cheese and sour cream add richness and healthy fats. Olive oil and lemon juice bring zest to the greens, crafting a nutritious, gluten-free, and speedy meal catered to health-conscious individuals.
A Simple Guide to Making Keto Zucchini Fritters
Begin by grating the zucchini thoroughly. Moisture will be extracted with a towel, ensuring that the fritters crisp up nicely. Combine the zucchini with egg, almond flour, psyllium husk, cheddar cheese, a couple of pinches of salt, black pepper, and a touch of onion powder in a mixing bowl. Allow this concoction to thicken for a brief period. Heat olive oil in a pan over a moderate flame . Place dollops of the zucchini blend into the pan. These should be flipped after cooking for a few minutes on each side until they adopt a golden hue. Accompany these gluten-free fritters with a fresh, green salad and a dollop of sour cream for a satisfying, nutritious snack that aligns with your keto diet and healthy eating objectives.
Creating Your Nutritious Green Salad
To put together your salad, combine arugula and romaine leaves in a bowl. Add olive oil and lemon juice, then toss. Season with salt and pepper for taste. This easy mix offers fibers and healthy fats, enhancing the fritters’ taste while keeping your meal keto-friendly.
Enjoying Your Keto Meal
To relish this nutritious snack, arrange the crispy Keto Zucchini Fritters next to the fresh Green Salad. A squeeze of Lemon Juice and a spoon of Sour Cream can add brightness. Avocados or olives introduce personalized healthy fats.

- 1 pinch* Onion Powder
- 1/4 cup grated (27 g) Cheddar Cheese
- 1 tbsp (3 g) Psyllium Husk Powder

- First, use a grater to shred the zucchini. Then, squeeze out any extra liquid using a towel or paper towel.
- In a bowl, mix the squeezed dry zucchini, egg, almond flour, psyllium husk powder, cheddar cheese, salt, black pepper, and onion powder* (I prefer to add this to the fritter ISO on the salad).
- Let it sit for 2 minutes to thicken.
- Next, heat a nonstick frying pan with ½ of the above olive oil over medium heat. Spoon about 2 tablespoons of the zucchini mixture into the pan for each fritter.

- Finally, serve the zucchini fritters with the green salad and sour cream on the side.

Def going to make these! Yum!
Hi Lydia, I truly hope you will enjoy them. Super easy and I love it.
These sound nummy, I’ll have to try with something other than sour cream. These family members with milk sensitivity are the issue. I haven’t tried plant based sour cream, will have to give it a go! Thanks, Sandi
You may use coconut cream or cashew cream iso of sour cream. Hope that will work. Please let me know how it turned out
