Description
This Lazy Day 7 Layer Dip is what I throw together when I want real comfort food with zero fuss. It’s warm, cheesy, a little messy, and honestly, dangerous to leave unattended on the counter.
Ingredients
- 1 pkg cream cheese, softened
- 1 onion, diced
- 1 tbsp minced garlic
- 1/2 cup ground beef
- Salt and pepper, to taste
- 1 tsp chili spice
- 1 tin refried beans
- 1 jar salsa, mild or hot
- 1 cup shredded cheddar cheese
- 1/2 bunch green onions, chopped
- 1 avocado, diced
- Butter, for cooking
Instructions
- Preheat the oven to 350°F and lightly butter a large casserole dish.
- Bigger is better here, so your layers stay thin and scoopable.
- In a skillet over medium heat, melt a little butter and cook the 1 diced onion until soft and just starting to turn golden.
- Add the 1 tbsp minced garlic and cook for about 30 seconds so it doesn’t burn.
- Add the 1/2 cup ground beef, season with salt, pepper, and 1 tsp chili spice, then sauté until fully browned.
- Drain off any excess fat so the dip doesn’t get greasy.
- Spread the 1 pkg softened cream cheese evenly across the bottom of the casserole dish.
- Don’t worry if it’s not perfect; it’ll melt and smooth out as it bakes.
- Spoon the cooked beef and onion mixture over the cream cheese, followed by an even layer of the 1 tin refried beans.
- Next, spread the 1 jar of salsa right over the beans, then sprinkle on the 1 cup shredded cheddar cheese and half of the 1/2 bunch chopped green onions.
- Bake uncovered for 20 minutes, or until the cheese is melted and everything’s bubbly around the edges.
- Once out of the oven, immediately top with the remaining green onions and the 1 diced avocado, so it stays fresh and creamy.
- Serve warm with tortilla chips and fresh veggies like carrot sticks.
