I know you cannot love something on the same spot with the same level. But when I have tasted this, I already knew I was cheating on my favorite cake – Mocha Cake. From then on, I asked myself if Mocha Cake can share its place with this new-found love of mine. Believe me, it’s so heavenly!!!! Words are not enough to describe how much I love this cake.

This cool brownie is on a sweet date. It’s so totally cool; it has spurned the heat of being baked but had a hot desire to be refrigerated instead. The date is delightfully sweet, as is proper for medjool dates, otherwise known as Judean dates.

I came across a picture of this cake many months ago on the internet and had decided there and then, that I would try this on our anniversary. The recipe seemed simple but loooong, still it seemed worth the effort for this particular occasion.

I planned this cake for weeks before the Halloween day and I was so glad when it turned out exactly as I had envisioned it as! In my mind’s eye, I saw a vibrant orange and brown cake with some fun decorations and garnish.

I enjoy baking cakes more than eating them. My hubby finds that hard to believe because I am a huge foodie and crazy for sweets but there is something about baking that definitely soothes me. It may be due to the fact that I whip my batter by hand instead of using the electric beater and it can be a good activity to channelize all your stress into the vigorous whipping hand exercise 😉

Shall we celebrate this occasion with our authentic Indian dessert Kulfi ? Here is the recipe of  Chocolate Kulfi which is a rich frozen dessert. Everyone loves this dessert for sure. Decadent treat to have with a cup of coffee or tea. Really quick and easy to make. I love a recipe that doesn’t need scales. I always use the same basic ingredients – plain and milk chocolate,  marshmallows  and digestive biscuits ( gluten-free or wheat). To these I vary what I add. For this post I used dried apricots and cranberries. Sometimes I use pistachios and other dried fruits.

There’s something about Red Velvet that I like. Perhaps it’s the intriguing dark, red colour. Perhaps it’s the subtle chocolatey taste, perhaps it’s that tinge of sourness. Heck! It’s everything about Red Velvet that I like. It’s hard not to like them and I find myself not being able to say no whenever I am offered with one.

There is no greater joy than spending a Sunday afternoon baking with the kids to:
– Keep the little imps occupied to minimise the damage they could do in tearing the house down
– Mesmerize them with the magic of butter, eggs, flour and licking up the resulting cookie dough

I recently had to make a vegan desert and I was actually very surprised of the outcome. This vegan brownie will surely win your attention (and heart) 🙂

I do not use any other recipe when I need a VEGAN CHOCOLATE CAKE. This one is moist and incredibly easy and above all mega yummy!
I made the this recipe x3 and had 6 dozen cupcakes, which I made for our granddaughter’s 1st birthday party. 👶

This one happened by accident.  I needed a treat to take to a get together, and then hunted in the baking cabinet and found these ingredients, so this was what happened.  It was well received, and I also made it more than once thereafter.  I winner and keeper.

      • Didn’t mean to offend with my sense of humor – my apologies.
        What is it they say — a cat can look at a king?! Here’s to feasting with the eyes alone (which I hope you understood that I enjoyed).
        Do you get many GF entries in the desserts category? Many of these I’ve looked at (even Dolly’s) I can’t eat unless I adapt — which you may know doesn’t always work successfully, so we time-challenged folk tend to want to make only the ones already known to work GF – especially with desserts.
        But I’m sure there are many happy bakers with chocolate smiles who looooved every single recipe.

          • Whew! Thanks for responding.
            GF recipes coming up is WONDERFUL news for me. Many of Dolly’s are as well, just not the chocolate cake I’d hoped to try).
            The fewer ingredients (esp. “unusual” ones) the better my shot at actually trying them out, so those will be my favorites. Most days I relate best to Alice’s White Rabbit.
            I have avoided gluten prophylactically since attending Dr. Thom O’Bryan’s first Gluten Summit many years ago. If you are unaware of him, I’ll be linking in an article or several I will be posting in May for Celiac Awareness month (I do a monthly awareness calendar for Mental Health overlaps and try to post info on at least one of them as well – this month is Brain Injury Awareness).
            Turns out that gluten negatively affects the brain as much or more than the gut in a great many folks.

            • WOW – thanks for this useful information. As I am off sugar for the last 2½+ weeks, I am also off any flour products. I had some rusks this afternoon (it does have flour and oats bran) and for sure it negatively affected me, and I have finally decided that’s it. It’s not a good feeling I experienced today and previuosly, and I will now also be looking for more GF recipes. I have already pinned many GF recipes, and will be testing them from now forthwirth and tag them accordingly when posting, so you should see more on the blog in future. All of the recipes under Es’s for the past 2½ weeks, mainly main meals = GF.
              Once you do your post as mentioned above, please link to me if you remember. That will be awesome, thanks in advance.
