  • 150g soft butter
  • 1/2 cup sugar
  • 3 eggs
  • 5 ml vanilla essence
  • 3 cups grated fresh Mealie
  • ½ cup flour
  • 3 tsp baking powder
  • 1/4 tsp salt

  1. Cream butter and sugar until pale in color.
  2. Add eggs one at a time.
  3. Beat well after each addition.
  4. Add the rest of the ingredients and mix well.
  5. Grease casserole and pour.
  6. Bake at 160C for 45-50 till golden brown

    • As its grated, I believe you should not have the need to boil the corn. I have not made this one myself as its been submitted by a member of my FB group so feel free to try it and let me ow how it turned out

    • Hi Ashadia. To be honest I have not made this one with cream-style corn. Should you try it, my suggestion would be that you will have to compensate for the extra wet ingredients by adding more dry ingredients otherwise it will be watery. If you have tinned whole corn kernels you may wish to try that (without the liquid). Please let me know how it turned out. Thanks and good luck.
