My meat-free meal is super delicious with homemade chipotle spiced black bean burgers topped with avocado on a whole-wheat seeded bun.

Ingredients

  • 1 Can Black Beans (drained)
  • 1 Red Bell Pepper (diced)
  • 1 Red Onion (diced)
  • 2 Cloves Garlic (grated)
  • 1 Egg (beaten)
  • 1/2 cup Breadcrumbs
  • 1 Tbsp. Paprika
  • 1 Tbsp. Ground Cumin
  • Salt & Pepper to taste
  • 1 Tbsp. Chipotle Pepper
  • 1 Tbsp. Adobo Sauce or 1 Tbsp. Chipotle Seasoning

Instructions

Place rinsed black beans in a bowl and mash only half of the beans well with a fork or potato masher and keep the rest whole and set aside.

Sauté the bell pepper, onion, garlic, chipotle pepper, and spices in a pan.

Allow to cool, once cooled, add it to the mashed beans and season well.

Add in the remaining whole beans, beaten egg, adobo, and breadcrumbs then stir to combine.

Form mixture into patties and place on a baking sheet in the fridge for about 20 minutes.

Grill the burgers in a lightly oiled pan till browned on one side then flip.

Build your burger and enjoy!!

You can also freeze them on a baking sheet then place them in a Ziploc bag for later use.
