Ingredients
1 Pkt short pasta of choice (I used screws)
1 Pkt bacon
Tomato slices
1 cup grated white cheddar cheese
1 cup grated yellow cheddar cheese
½ cup parmesan cheese cheese
Extra cheddar for topping
4 tblsp butter
4 tblsp flour
2 cups warm milk
250 ml cream
¼ tsp nutmeg
Salt and freshly ground black pepper
1/8th tsp garlic powder
Method
Fry bacon till cooked, but not crisp and drain on paper towel.
Cut into small pieces. Boil pasta as directed and drain.
Add some butter to prevent sticking.
Preheat oven at 180 degrees.
Sauce
Melt butter, add flour and stir to form a roux.
Add the warm milk and seasoning and whisk until it starts to thicken.
Remove from heat and add all the cheeses and stir till cheese starts to melt.
Add cream and heat through. Add pasta and mix to combine.
Add bacon and mix through. Spray casserole dish with cooking spray.
Pour pasta into dish. Place tomato slices on top. Season with salt and pepper.
Top with cheddar cheese.
Reduce oven to 160 degrees.
Bake for approximately 30-40 minutes depending on oven (ie fan assisted or not).
