The first and last time I made butter chicken was when I joined my first recipe group site in August last year and I saw the recipe for Butter Chicken, which until then I had only seen on a menu in a Restaurant. The same with naan bread.
I recently saw a post for Butter Tandoori Chicken and decided to make it again with tandoori. Of course Naan bread with it is par for the course. I added spring onion to my dough instead of my garlic butter. Enjoy!
Butter Tandoori Chicken
1.5 kg chicken pieces
1 tblsp ginger/garlic paste
1 large onion
1 large cinnamon stick
1 tsp salt
1 ½ tsp chopped red chilli
1/2 tsp tumeric powder
3/4 tsp black pepper
1 tblsp tandoori paste (home made)
1/2 tsp sugar
2 tbls lemon juice
1/2 cup yogurt
3/4 tsp garam masala
2 Tblsp tomato paste
(Marinate chicken in the above for 3-4 hours, preferably overnight)
½ cup ghee
250 ml fresh cream
Finely chopped green coriander
Chop onion roughly and add to a blender with a little bit of water and puree onion.
Add ghee to wok/large pan and once it starts to froth add onion and cinnamon stick and cook for 5 minutes.
Add chicken and cook uncovered on medium/high for 15 minutes.
Then reduce heat and cover and cook for another 25 minutes or so until done.
Add fresh cream and simmer for 5 minutes.
Garnish with fresh coriander. Serve with basmati rice or naan.
