Well these Chocolate Cuppies were said to be Melanie Proof, so I had to try them and they came out lovely. I even dared to take a chance and add peppermint essence to the original recipe with tasty results.
125g butter or margarine
1 cup sugar
1 tsp peppermint essence
1 1/2 cups flour
4 tsp baking powder
8 tsp cocoa
1/2 cup milk
Cream butter and sugar. Add eggs one at a time beating after each one.
Beat in essence.
Sift flour, baking powder and cocoa in another bowl and stir then add to wet ingredients alternating with the milk.
Stir till well combined.
Fill muffin cups ¾ of the way and place in muffin pans.
Bake in preheated oven at 180 degrees for 15 min. Decorate as desired.
I used chocolate ganache, chopped almonds and candy sprinkles
