Anybody for some Corn Chili Bites on this dreary Saturday afternoon? Bought a box of the Chili Bite mix last week. This my first attempt.
4 sweetcorn
Chopped mint,
1tsp fennel seeds
2 tsp hot paprika
1 box chili bite mix
A squeeze of lemon juice
1tsp baking powder
Salt to taste
Boil sweet corn till tender.
Allow to cool Using sharp knife, slice sweet corn from the husk into a bowl.
Canned drained kernels can also be used.
Add remaining ingredients.
Add enough cold water to all the above to make a batter.
Add tablespoon full to deep hot oil and fry till golden.
