Growing up I knew them as Flapjacks. The Americans call them Pancakes. But now-a-days they’re called Crumpets. They are all one and the same thing. Anyway. Enjoy this delightful tea time treat.
Ingredients:
2 cups self-raising flour
1 tsp baking powder
Pinch of salt
3 tblsp castor sugar
1 ¼ cups milk
1 tblsp butter
1 tsp caramel essence
2 eggs
Method
Add wet ingredients to a blender and blend on slow till smooth (or whisk).
Sift dry ingredients into a bowl.
Pour in milk mixture and whisk into a smooth batter consistency.
Spray a non-stick pan with cooking spray.
Ladle in a ¼ cup of batter and leave until bubbles form then flip (depending on size of pan you can do two at a time).
Transfer to a plate and cover with foil.
Repeat the process, spraying the pan with each new batch.
Serve with syrup, butter and jam, fruit – or whatever you wish.
