Melanie's Deep Fried Parmesan Chicken Breast

I didn’t know what to do with chicken breasts, for me it’s either Schnitzel or Cordon Bleu. I tried something different since my daughter bought me a deep fryer, and deep fry it. (Love my deep fryer). Don’t know how our mother’s and granny’s managed 😋. Quick and easy though it looks more like fish than chicken. I served it with a mixed veggie and cheese sauce bake.
Ingredients:
4 chicken breasts, pounded to ¼ inch thickness
½ tsp seasoning salt
½ tsp chicken spice
½ tsp freshly ground black pepper
1 cup flour, add
1 tsp smoked paprika
1 tsp thyme
1 egg beaten, add to
1 cup butter milk
2 cups grated parmesan cheese mixed with
1 cup panko bread crumbs
Method:
Season the chicken with spices and rub in. Let it sit for about 15 minutes.
Mix the egg, buttermilk.
Add the chicken and leave for about an hour covered with cling wrap or until ready to fry while you get on with other stuff.
When ready drain off excess buttermilk dredge in the flour back in the buttermilk mixture then press into the cheese and panko mixture.
Heat oil in the deep fryer until hot.
Place chicken breasts in basket and lower into the hot oil for about a 1-2 minutes and soon as it’s golden remove and place on paper towel.
I felt like a pro in a fish n chips shop 😎 it’s so quick!
The Veggie Bake
I once again did my end of week clean out of bits and bobs of what I found in my fridge.
I found a few pieces of cauliflower and broccoli left in a packet, 3 zucchini, about 4 of yellow patty pan squashes and steamed it and made a cheese sauce and baked it.  It was more cheese and sauce than veggies!
