Well baking and I are not friends, so imagine my delight when I came across this Do Nothing Cake on my time line. I thought well another simple one that even I can’t mess up. Also the one time my cake didn’t crack and came out perfect but then I had to poke holes in it! An easy and super yummy tea time treat.
Ingredients
2 cups flour
2 cups sugar
2 eggs lightly beaten
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 can crushed pineapple
Frosting
Ingredients
½ cup butter
1 cup sugar
1 can evaporated milk
1 cup chopped pecans
1 cup coconut
Method
Preheat oven to 175 degrees C.
Mix the flour and the sugar, baking soda and salt in a mixing bowl.
Add the eggs, vanilla and the can of undrained crushed pineapple and mix until well blended with electric mixer on medium speed.
Pour into the prepared 9 x 13 pan and bake 45 minutes until the cake is lightly browned and a toothpick comes out clean. Be very careful not to overbake.
Frosting:
Add butter, sugar and evaporated milk together in a heavy saucepan.
Bring to a slow boil over medium heat, stirring constantly.
Once mixture begins to boil, cook until mixture thickens (about 7 to 10 minutes).
When thickened, remove from heat. Stir in coconut and chopped pecans.
Poke holes into cake (I used a chop stick) and pour sauce onto warm cake and spread over the top.
Cool before serving.
