Melanie's Honey Mustard Chops

Well the week is never complete without pork chops done in some way or another and this recipe is one I adapted from a chicken recipe. I made Honey and Mustard Pork Chops with creamy mashed potato, and mushrooms with yellow squash in pepper sauce.
Ingredients
4 pork loin chops
Crack of Himalayan salt
Crack of black pepper
¼ tsp 5 spice powder
2 tblsp Dijon mustard
½ tsp mustard powder
2 tblsp honey
1 tsp apple cider vinegar
Method
Mix all the spices together in bowl, add chops and coat and leave to marinade for a few hours, turning occasionally.
Air fry at 200 degrees for 8-10 minutes.
Creamy Mashed Potato
Ingredients
3 Potatoes, quartered
1 chicken or vegetable stock cube
2 tblsp butter
2 tblsp cream cheese
1 tsp baking powder
1 egg
1 tblsp white onion soup powder
Salt and pepper
½ cup of fresh cream (or milk or both)
Method:
Add potatoes to cold water and bring to a boil with stock cube till tender.
Drain and return to the pot.
Mash while still hot.
Then add baking powder, soup powder, cream cheese and butter and using and electric hand beater (NOT BLENDER) start mixing.
Add egg, salt and pepper and mix.
Slowly start adding cream/milk while mixing till you get desired consistency.
Mushrooms and Squash
Ingredients:
1 can whole mushrooms
6 yellow squash (patty pans)
1 chilli crushed
2 cloves garlic
2 tblsp butter
1 pkt black pepper sauce
Method:
Heat butter in a pan, add garlic and fry a few seconds.
Add chilli and squash and fry till tender.
Add drained mushrooms.
Make sauce as directed and add season to your liking.
