I decided to experiment with this MINT AERO CHEESECAKE today which turned out very yummy indeed.I was supposed to decorate it with blobs of whipped cream and aero bubbles (never seen them) so just decorated with crushed Mint Aero and Oreo. Oh, and don’t do what I did. I blitzed the Oreos first, then saw I had to do it without the cream in between. Luckily I had an extra box.
150 gr Oreo biscuits
85g Melted butter
350g Soft Cream Cheese
250g Icing sugar
250ml Whipping cream
2 Large Mint Aero Bars, crushed
½ cap full peppermint essence
Crush biscuits (without cream) in ziplock bag with rolling-pin or blitz in your processor.
Add in the melted butter.
Mix Cream Cheese, crushed Aero bars and icing sugar. (Reserve some chocolate for topping).
Whip the whipping cream and add to the mixture.
Add the essence and combine.
Spread mixture on your biscuit base.
Add the remainder of grated Aero Bars to the top of the cheesecake.
Leave to set in the fridge for 8 hours (preferably overnight)
