The only reason why I buy bananas is not because I eat bananas but just to wait for them to ripen because I love nutty banana bread. I had a few cherries in the fridge so threw them in too. This doesn’t last very long in my house.
Ingredients
3 ripe bananas, mashed
1 cup white sugar
2 eggs
¼ cup melted butter
2 cups flour
1 teaspoon baking powder
½ tsp baking soda
1 teaspoon salt
4 tblsp crushed pecan nuts
4 tblsp chopped cherries (dusted in flour)
1 tsp vanilla extract
Method:
Preheat oven to 170 degrees grease a 9×5-inch loaf pan.
In a mixing bowl sift flour, baking powder, baking soda and salt together.
Add the sugar and nuts and stir.
Add banana, melted butter, egg and vanilla extract to a blender and blend well (or use electric hand mixer).
Add to dry mixture until a smooth batter is formed.
Fold in floured cherries.
Pour into the prepared loaf pan.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean.
About 45 minutes to an hour.
