If I don’t cook potatoes everyday (IF I cook) there’s mayhem in my house, and I’ve run out of ways to cook them. So when I saw this recipe for potato bites in my FB time line I decided to try it (with extra seasoning). Although when my brother saw it in the muffin pan he got excited thinking something had come over me and I was baking muffins 🙂 It was an accompaniment to my Spicy Grilled Chicken and Zucchini in Tomato Gravy (Chutney).
Spicy Grilled Chicken
Ingredients:
8 chicken drum sticks
1 tsp pink himalayan salt (any salt will do)
1 tsp black pepper
1 Tblsp crushed garlic
1 tsp jeera powder
1 tsp Moroccan spice
1 tsp Portuguese spice
1 tsp crushed chili flakes
1 Tbsp chili oil
Zest and juice of half a lemon
¼ cup mayonnaise
¼ cup Mrs Balls chutney
1 Tblsp Worcestershire sauce
Method:
Whisk all ingredients together in a bowl.
Add chicken and rub into chicken.
Refrigerate for ½ an hour. Bring to room temperature.
Preheat oven to 180C. Place drum sticks in oven proof dish.
Brush marinade over chicken and bake for 35 minutes.
Turn chicken and pour remaining marinade over chicken and bake another 20-30 minutes.
Cheesy Potato Bites
Ingredients
3 grated potatoes
3 eggs,
½ cup grated cheddar cheese
¼ finely chopped onion
¼ tsp garlic powder
¼ tsp chili flakes
Pinch of mustard powder
¼ tsp Aroma mix
salt and pepper
Method:
Preheat oven to 180 degrees.
Drain water from potatoes. (The potato water is excellent for the skin blemishes).
Add the rest of the ingredients and mix to combine.
Spoon into greased muffin tray.
Bake at 180’C for about 25 minutes.
Zucchini in Tomato Gravy
Ingredients
5 zucchini sliced into coins
3 Tblsp olive oil
1 onion chopped
3 tomatoes grated
2 Tblsp tomato paste
4 crushed garlic cloves
1 tsp chicken stock
1 tsp sugar
1 tsp jeera powder
1 tsp chili powder (Kashmiri)
1 tsp thyme
Salt and pepper
Method
Heat oil and add onions, sprinkle a little salt and fry till tender.
Add garlic and fry till fragrant.
Add rest of ingredients except zucchini and bring to a low simmer for 10 minutes.
Add zucchini and continue on low simmer until zucchini is tender.
