What I thought was going to be an easy lazy chicken dish turned out to be quite a surprising meal. I literally ‘threw’ the ingredients together and then just left it to bake in the oven.
1 Tray of chicken pieces
8 garlic cloves minced
Juice of one large lemon
1 red chili, chopped
1 packet of Ina Parman’s Sundried tomatoes
Few sprigs of rosemary leaves, chopped
1 tsp chicken spice
1 tsp kosher salt
½ tsp black pepper
1 tsp crushed chilli flakes
Place chicken pieces in large Ziploc bag.
Add the remaining ingredients and massage bag coating chicken.
Seal bag and refrigerate for as long as possible.
I marinated in the morning and put in the oven in the afternoon – minimum 3 hours.
Preheat oven to 180 degrees.
Place chicken in oven proof dish and cover with foil. Bake for 45 minutes.
Remove foil and grill for another 15 minutes
