I have several Meat Loaf recipes, but this the first time I have made it without using a meat loaf tin. It is more fun, and a whole lot juicier. I call this the ultimate meat loaf.
I swapped the boring breadcrumbs for salticrax.
The last time I used provitas. I think maybe I’ll use cheese biscuits next time :-). It’s super moist and does not need a separate sauce.
Ingredients
700 gr ground beef (or lamb)
1 onion, grated
½ red, green, yellow pepper grated
1 chili chopped
2 tblsp worcestershire sauce
2 tblsp tomato sauce
1 egg
1 tbsp BBQ spice
1 cup salticrax, processed in processor
2 tbsp fresh parsley
1 tblsp fresh thyme
Salt and pepper
Mix all together thoroughly till well combined
Topping:
In a pouring jug add
¼ cup tomato sauce
2 tblsp Worcestershire sauce
1 tsp chili sauce
2 tbls BBQ sauce
3 tbls warm water
(Mix well)
Method
Preheat oven to 180 degrees.
Spray a baking sheet with olive oil spray n cook.
Empty contents of ground meat onto tray and using hands shape into a loaf.
Pour sauce over and allow to drip down the sides.
Wipe excess from the tray as it will burn.
Sprinkle extra parsley and crumbs on the top.
Bake for 45 minutes to an hour depending on the size of the loaf.
