Description

These cookies are incredibly soft, light, and melt the second you bite into them. You don’t need eggs, fancy equipment, or even a lot of effort. Just simple ingredients, one bowl, and a little patience while they bake. The result? A delicate, buttery cookie with a crisp edge and a rich chocolate tip that’s perfect for gifting, holidays, or keeping all to yourself.


Ingredients

Scale
  • 1 cup icing sugar
  • 3/4 cup vegetable oil
  • 500g unsalted butter (room temp)
  • 5 cups cake flour (plus up to 1/2 cup more if needed)
  • Melted chocolate (for dipping)

Instructions

  1. Beat the butter until it’s creamy and smooth.
  2. Add the oil and beat for another 2 minutes until well mixed.
  3. Mix in the icing sugar and keep whisking until the mixture is stiff and creamy.
  4. Add the flour and use your hands to bring the dough together. It should feel soft, but not too sticky.
  5. If it sticks a lot to your hands, add up to ½ cup more flour.
  6. Fit a piping bag with a star nozzle.
  7. Pipe the dough directly onto a butter-greased baking sheet, keeping the nozzle straight up and down.
  8. Bake at 350°F (175°C) for about 12–14 minutes.
  9. They’re ready when the edges are just turning golden.
  10. Let them cool completely.
  11. Dip the ends in melted chocolate and place them on parchment paper to set.
  12. Once the chocolate firms up, store the cookies in an airtight container; they stay fresh for several days.
