Microwave Orange Cake with Fresh juice and Rind

My family enjoyed the microwave chocolate cake I made so much I just had to try an orange cake version too so I prepared this Microwave Orange Cake with Fresh juice and Rind.  The boys and I then decorated it in white chocolate ganache and funfetti sprinkles.

Ingredients
1 1/2 cup cake flour
4 tsp baking powder
1 cup sugar
A crack of sea salt
2 eggs
1/4 cup oil
1/2 cup hot warm water
1/2 cup orange juice
The rind of 2 oranges

Method:
Whisk together the dry ingredients then form a well in the center.
Add the eggs and fold closed.
Add the oil, water, orange juice, and whisk well to combine.
Pour into a greased microwave bowl and cook on high for 7 mins.
Once cooking time is up, leave in the microwave for a min or 2 before removing.
Flip onto a serving plate and decorate as desired.

White Chocolate Ganache

Ingredients
200g white chocolate
1 cup thick cream
2 cups icing sugar

Method:
Heat the cream in the microwave for 1 min.
Break the chocolate into blocks and stir into the warm cream.
Mix till smooth. Add the icing sugar slowly, stir well to ensure no lumps form.
The ganache becomes firm as it sits.
Adjust the texture by adding more cream or icing sugar if needed.

  1. Ingredients list includes rind of two oranges but not mentioned in method, so what are they for please?

    1. Thank you for pointing that out, I will update the method, but add the rind with the last ingredients and fold in and then bake as per instructions.
