1&1/2 cup oil
1&1/2 cup brown sugar
1 tsp vanilla essence
2 cups self-raising flour
1 tsp bicarbonate of soda
1 tsp mixed spice
2 tsp ginger powder
Mix well and then fold in 4 cups grated carrots, half cup walnuts / pecan nuts (they mixed both) and half cup dates finely chopped / sultanas.
Separate the mixture into a round baking tin and a bundt tin or use any shaped tin u prefer. Bake in a preheated oven at 180 deg cel for +-30 mins or until tooth pick comes out clean when cake is pierced. Ice once completely cool.
Cream Cheese frosting:
1 tub cream cheese at room temperature
+- 2 cups icing sugar
1 tsp vanilla essence
1/4 tsp salt
Beat all of the above ingredients together until smooth. Add a little milk to get the desired consistency if necessary. Decorate as desired, we used maraschino cherries, nuts, candied ginger and sprinkles. Enjoy
EASIEST YEAST PIZZAS.

1 1/2 cups flour
1 cup whole wheat flour
1 tsp salt
1 tbs sugar
7g instant yeast
2 tbs olive oil
1 cup warm water
Combine flour, salt, sugar, and yeast in a large bowl. Mix in oil and warm water. Spread out on a large pizza pan. Top as desired. My boys topped the pizza with Italian tomato paste, mushrooms, cocktail tomatoes, assorted peppers, italian herbs, salami, roast chicken and lots of mozzarella cheese. Bake at 200 deg cel in a preheated oven for +-25 mins.

Fried bacon (substitute with any meat of your choice)
Fried garlic polony
Lightly fried onion
Crystals Sandwich Man, tomato and mustard sauce
Lots of cheese
It takes 3 slices of bread to make each dagwood.
Toast 1 of the 3 slices, this slice will be in the middle of the sandwich.
Layer the ingredients in any order u like making sure that cheese touches all sides of the bread inside the sandwich
This will ensure that the sandwich does not fall apart.
Place in a sandwich press until bread is toasted and cheese melts.
