Oh, so so pretty, Mini Christmas Cakes. You and everyone that receive this as a gift will love every morsel of it. They are so pretty, they will not want to share!

Ingredients:

  • 1 kg fruit mix
  • 100 gm cherries
  • 100 gm nuts
  • 2½ cups dark brown sugar
  • 375g butter
  • 2 cup water
  • 1 pk dates
  • 4 eggs
  • 5 ml vanilla extract
  • ½ cup brandy
  • 1 ml salt
  • 5 ml each mixed spice, clove, and ginger powder
  • 5 ml bicarb
  • 4 cup flour

Method:

  1. Boil water sugar dates fruit n butter about 10-15mins.
  2. Cool totally
  3. Add spices and bicarb and mix to foam up.
  4. Add beaten eggs and vanilla.
  5. Add cherries and nuts fold in.
  6. Add sifted flour and blend well.
  7. Pour in lined greased 23 cm tin
  8. Bake at 140 deg 3-4 hrs
