Mona's Baked sliced eggplant and cheese

Ingredients:
2 medium eggplant
One jar of your favorite store-bought spaghetti sauce
Shredded mozzarella cheese
Olive oil
TRH Mona's Baked sliced eggplant and cheese
Method:
Preheat oven to 350 degrees
Slice eggplant in 1/4″ slices. Place slices on a foil lined pan
Drizzle olive oil over all the slices
Bake eggplant slices for 15 minutes
Remove from oven and spoon spaghetti sauce over the slices
Add mozzarella cheese on top
Bake in oven for 15 minutes or until cheese has browned.

  1. I’m sure the one in Italy was probably better but these are good and very easy to prepare. And with 30 minutes of baking time and ten minutes of prep work you are eating very quickly.
