Ingredients:
3 cups of cooked plain rice/ Brown rice,
1 cup of small onion pieces,
1 teaspoon of grated garlic,
Fresh paste of 6 big tomatoes,
1 teaspoon of red chilli powder/flakes,
1 teaspoon of whole black mustard seeds,
Fresh coriander leaves.
Fresh curry leaves (Optional),
Salt,
Cooking oil – 3 teaspoons
Method:
In a vessel, heat the oil, put mustard seeds, curry leaves, then onion pieces, shallow fry.
Mix the grated ginger, tomato paste, chilli powder, mix well.
The tomato paste will reduce to half quantity, keep on stirring.
Mix the cooked rice, salt.
Garnish with fresh coriander leaves.
Serve hot
