Description
This warm keto salad brings together tender Portobello mushrooms, fresh asparagus and boiled eggs, all dressed in a bright, herby basil chimichurri. It’s a lovely way to enjoy a satisfying low carb meal that feels fresh, filling and just a little different from your usual salad.
Ingredients
Warm Salad
- 1/4 cup (62.5 ml) keto-friendly cooking fat, such as lard, beef tallow or coconut oil
- 1 lb (450 g) Portobello mushrooms, quartered
- 1/2 lb (225 g) fresh asparagus, woody ends trimmed and stalks cut into thumb sized pieces
- Sea salt and freshly ground black pepper, to taste
- 4 large eggs
Basil Chimichurri
- 1/2 cup (125ml) fresh basil leaves, loosely packed
- 1/4 cup (62.5 ml) MCT oil, olive oil or avocado oil
- 2 tbsp (25 ml) fresh chives, finely chopped
- 2 tbsp (25 ml) coconut vinegar or apple cider vinegar
- Salt and freshly ground black pepper, to taste
Instructions
- Heat 1/4 cup keto-friendly cooking fat in a large skillet over medium heat. Add 1 lb (450 g) quartered Portobello mushrooms and cook for about 5 minutes, stirring occasionally, until they begin to soften and release their moisture.
- Add 1/2 lb (225 g) trimmed and chopped asparagus to the skillet. Continue cooking for another 5 to 8 minutes, stirring occasionally, until the mushrooms are tender and nicely browned and the asparagus is bright green and tender but still has a little bite. If the skillet looks crowded, cook the vegetables in batches so they brown instead of steam. Season with sea salt and freshly ground black pepper to taste.
- While the vegetables cook, place 4 large eggs in a saucepan and cover them with cold water. Bring to a boil, then reduce the heat to maintain a gentle simmer. Cook for 6 to 7 minutes for soft-centred eggs or 10 to 12 minutes for hard-boiled eggs. Transfer the eggs to a bowl of ice water to stop the cooking, then peel them once cool enough to handle. For soft-boiled eggs, peel carefully and cut them just before serving.
- To make the basil chimichurri, combine 1/2 cup fresh basil leaves, 1/4 cup MCT oil, olive oil or avocado oil, 2 tbsp chopped fresh chives and 2 tbsp coconut vinegar or apple cider vinegar in a blender or small food processor. Blend until finely chopped and well combined. Season with salt and freshly ground black pepper to taste. Add a little extra oil if you prefer a thinner dressing.
- Divide the warm mushrooms and asparagus between two serving plates or arrange them on a platter. Halve the 4 boiled eggs and arrange them over the vegetables.

Additional Information and Tips
- Can I prepare any components ahead of time? Yes. Prepare the basil chimichurri and boil the eggs ahead of time, storing them separately in the refrigerator. Cook the mushrooms and asparagus shortly before serving so they retain their best texture and flavour.
- How do I stop the mushrooms from becoming watery? Use a large skillet and avoid overcrowding it. Cook the mushrooms over medium heat until their moisture evaporates and they begin to brown before adding the asparagus. If necessary, cook the vegetables in batches.
- How do I cook the eggs to the right consistency? Simmer large eggs for approximately 6 to 7 minutes for soft centres or 10 to 12 minutes for hard-boiled eggs. Transfer them to ice water after cooking to stop the cooking process. Timing can vary with egg size and starting temperature.
- Can I serve the salad cold? Yes. Let the cooked vegetables cool before refrigerating, then serve them chilled or at room temperature with the eggs and basil chimichurri. The vegetables will have a firmer texture when freshly cooked and served warm.
- Can I use another type of mushroom? Yes. Cremini or white button mushrooms work well. Portobello mushrooms have a meatier texture and deeper flavour, but the alternatives are suitable for this salad too.
- What can I use instead of asparagus? Green beans or zucchini are good alternatives. Cut them into similar sized pieces and cook until tender but not mushy.
- Can I replace the basil? Fresh parsley, cilantro or a combination of parsley and basil will work. The flavour will change slightly, but the dressing will still complement the mushrooms and asparagus.
- Which oil works best for the chimichurri? Extra virgin olive oil provides a fruity, robust flavour, while avocado oil is milder. MCT oil is another option if it suits your diet. Use an oil you enjoy in an uncooked dressing.
- Can I use a different vinegar? Yes. Apple cider vinegar is already a suitable option, and red wine vinegar also works well. Adjust the amount to suit your preferred level of acidity.
- How can I make the chimichurri less sharp? Start with less vinegar and blend the dressing. Taste it before adding more. If it’s still too sharp, add a little extra oil to balance the acidity.
- Can I add tomatoes? Yes. Cherry tomatoes or small tomato wedges add colour and freshness. If you’re following a strict keto plan, keep your portion size in mind because tomatoes contribute carbohydrates.
- Can I freeze this salad? Freezing isn’t recommended. The mushrooms and asparagus can become watery, boiled eggs may turn rubbery, and the basil dressing can lose its fresh colour and flavour after thawing.
- Is this salad suitable for a keto diet? The ingredients are generally compatible with a keto eating plan. However, the total carbohydrate count depends on portion sizes and the ingredients used. Calculate the nutrition from your actual quantities if you’re tracking net carbohydrates closely.
- What can I serve with this salad? Enjoy it on its own as a satisfying lunch or light supper. For a larger meal, serve it alongside grilled chicken, salmon or another protein that suits your eating plan.
How long can I store the salad?
- Cooked mushrooms and asparagus: Refrigerate in an airtight container within 2 hours of cooking and use within 3 to 4 days.
- Hard-boiled eggs: Keep in the refrigerator for up to 1 week in their shells. Peeled eggs are best used within a few days.
- Basil chimichurri: Store separately in a sealed container in the refrigerator and use within 3 to 4 days for the best quality.
- Assembled salad: Refrigerate promptly and ideally consume within 1 to 2 days for the best texture.
- Keep the components separate whenever possible. Reheat the vegetables gently and add the eggs and dressing afterwards.

Mushroom Asparagus Salad with Basil Chimichurri is an appealing choice for anyone wanting a fresh, satisfying keto meal without the usual leafy greens. Tender mushrooms, crisp asparagus, boiled eggs and a vibrant basil dressing make every serving full of flavour, and the choice of soft or hard-boiled eggs lets everyone enjoy it their way.
