My very own Home-made Spicy Thai Pork Chops

My very own Home-made Spicy Thai Pork Chops

Well as is the norm in my household Pork Chops is a must every week. I stumbled on a nice 7 Thai Spices to marinate them with. Served it with Creamed Spinach and a medley of frozen veg and some store-bought Parmesan Saffron Tastic Rice

Ingredients
4-6 lean pork chops
¼ tsp sea salt
½ tsp white pepper
1 tbsp 7 Thai Spice
1 tbsp Peanut oil

Method
Season chops with salt and pepper.
Mix the Thai spice with half the peanut oil.
A greased casserole dish with remaining peanut oil and grill in a preheated oven at 180°C for about 15-20 minutes turning halfway.

Creamed Spinach

Ingredients
6 TB butter (divided)
1 whole clove
3 cloves garlic, minced
1 grated onion
1 packet spinach
4 TB flour
Pinch of fresh nutmeg
1 ½ cups cream
¼ cup parmesan cheese

Method
Melt 3 TB butter in a pot and add spinach.
Cook on low until spinach has wilted.
Drain in a colander while you make your sauce.

Sauce

Melt butter, add clove and fry in butter for a minute or so then remove clove.
Add onion and garlic and stir 1 minute.
Add flour and whisk to form a roux.
Gradually add cream and whisk.
Season with salt, pepper, and nutmeg.
Set aside.
Squeeze out excess liquid from spinach.
Roughly chop and add to the sauce.
Add ¼ cup parmesan cheese.

The frozen veg I just steamed in chicken stock, drained and seasoned.
For the rice, I followed the directions on the packet.
