Chicken Roll ups
Ingredients:
1 chicken breast washed,towel dried and flatten out till thin.
Roberstson Portuguese spice.
Black pepper.
Salt to taste.
Baby spinach leaves.
Grated cheese.
Aubergine slices.


Method:
Place the flattened chicken on a sheet of cling wrap.
Season with Roberston spice, black pepper and salt.
Layer the baby spinach, the cheese the Aubergine and cheese.
Lastly season again.
Wrap tightly in cling wrap and refrigerate for an hour.
Remove from the cling wrap and roll on extra Portuguese spice as a coating.
Heat a pan with butter and oil and fry till well done.
OR one can steam it for a more healthier option and sprinkle over the portuguese spice.
Allow to rest for 6 mins and slice and serve.
Aubergine Puree
Ingredients:
1 small baby onion grated.
1 small aubergine grated.
1 tomato grated.
Salt and pepper to taste.
2 Tblsp tomato sauce or puree.
Pinch of garlic slices.
Method:
Heat oil in a pot, add the garlic and onion.
Cook till light in colour.
Add the rest of the ingredients and cook till thick and smooth.
Remove from heat.
(This can be eaten on toast with veg or cheese)
End result, it’s very yummylicious, tangy, sweet and sour. Not a heavy meal
