Ingredients:
1/2 cup lentils washed and covered in hot water in a bowl and seal, for 30 mins (done).
2 1/2 cups rice washed and half boiled with salt and 5 cloves. Strain and set aside.
2 onions finely sliced, braised in oil till golden brown, set aside.
1 whole chicken washed and disjointed
Marinate as follows:
Salt to taste.
2 tsp durban masala
1 Tblsp Garam masala
2 tsp leaf masala
1 tsp cumin masala
1 tsp fennel masala
Marinate for 30 mins
Add 1 chopped green pepper to this marinate.
Add half the steamed lentils to this.
Add half the golden brown onions to this mixture.
The chicken is raw, wash it well before marinating it, it will cook perfectly while steaming.
2 carrots peeled and diced.
1 packet baby poatoes peeled.
(Boil this till half done).
TO ASSEMBLE:
In a pot.
Add 5 Tblsp oil and 1 Tblsp butter.
Add half the rice.
Then add lentils.
Half the cooked carrots.
Then add the chicken mixture.
Add the potatoes.
Sprinkle with one chopped green chili (OPTIONAL)
1 cup of whole kernals & peas.
Top with the rest of the rice.
Then carrots.
Lentils.
Lastly sprinkle the last of the golden brown onions.
1 tsp saffron in 1 cup water and spoon around over the rice.
Steam on a medium heat and cook till done.
This dish is similar to Indian Breyani, but there is no yoghurt . I’ve made this very simple and easy. Packed with nutrients and the vegetables and chicken is steamed.
Enjoy with a greek salad and plain greek yoghurt.
