My girlfriends came to visit and we were all hungry.
They put me up to a challenge.
Each person chose something from the fridge.
1. Burger patties.
I had less than 25 minutes to prepare this.
1 medium onion sliced.
4 burger patties cubed.
Salt and pepper.
1 packet baby spinach.
In a wok, heat 1 tspn butter. Add the onion.
Cook for 2 minutes. Add the cubed burger patties and saute till done.
Add salt and pepper.
Lastly switch off the heat and add the washed spinach and allow to wilt. Allow to rest.
3 medium potatoes, poke holes in and microwave till soft.
Peel the skin off and cut in chunks.
Add salt and crushed black pepper and chopped fresh coriander.
Mix in mayonnaise. Mix well.
Serve the warm potato salad and saute spinach and burger patties.
Quick. Easy, surprisingly it was yummy.
