No-Churn Homemade Pistachio Ice-cream
Ingredients:
- 1 Cup unsalted shelled pistachios
- 3/4 cups sugar
- 2 cups full-fat milk
- 1 tsp almond extract
- 4 egg yolks
- 1 cup whipped cream
- 1 Cup chopped unsalted pistachios
Method:
- Blend 1 Cup pistachios and 1/4 sugar together.
- Heat milk and add the pistachio mixture.
- Remove from heat and add almond extract.
- Whisk yolks and remaining sugar add the pistachios mixture and cook for 10 minutes.
- Remove and place in a freezable container in the fridge for 2 hours.
- Add whipped cream and nuts and fold through and place in the freezer until completely frozen.
- All that now remains to be done: Dig in and enjoy 😊
