No-Churn Homemade Pistachio Ice-cream
1 Cup unsalted shelled pistachios
3/4 cups sugar
2 cups full-fat milk
1 tsp almond extract
4 egg yolks
1 Cup whipped cream
1 Cup chopped unsalted pistachios
Blend 1 Cup pistachios and 1/4 sugar together.
Heat milk and add pistachio mixture.
Remove from heat and add almond extract.
Whisk yolks and remaining sugar add pistachios mixture and cook for 10 minutes.
Remove and place in a freezable container in the fridge for 2 hours.
Add whipped cream and nuts and fold through and place in the freezer until completely frozen.
All that now remains to be done: Dig in and enjoy 😊
