No-Churn Homemade Pistachio Ice-cream

No-Churn Homemade Pistachio Ice-cream


  • 1 Cup unsalted shelled pistachios
  • 3/4 cups sugar
  • 2 cups full-fat milk
  • 1 tsp almond extract
  • 4 egg yolks
  • 1 cup whipped cream
  • 1 Cup chopped unsalted pistachios


  1. Blend 1 Cup pistachios and 1/4 sugar together.
  2. Heat milk and add the pistachio mixture.
  3. Remove from heat and add almond extract.
  4. Whisk yolks and remaining sugar add the pistachios mixture and cook for 10 minutes.
  5. Remove and place in a freezable container in the fridge for 2 hours.
  6. Add whipped cream and nuts and fold through andΒ place in the freezer until completely frozen.
  7. All that now remains to be done:  Dig in and enjoy 😊
