You will not find an easier, quicker, or tastier no flour peanut butter and banana muffin!
You need to try this one soon!
Ingredients:
250 ml smooth and creamy peanut butter
2 medium bananas
2 large eggs
7 ml baking soda
5 ml Organic unfiltered apple cider vinegar
25 ml Maple Syrup
1 ml pure vanilla essence
7-9 Blueberries, per muffin for the top.
Note: they do drop to the center of the muffin, as it’s a very runny batter. Next time, I will dust them with flour and hopefully, they will stay at the top. Nevertheless, it’s delicious!!
Method:
Spray a 6 well large cupcake pan (you can also use a regular muffin pan), and only fill ¾ with batter as they rise exceedingly high.
Blend all ingredients together, except the blueberries, until well mixed and frothy.
Pour batter into cupcake pan.
Decorate each muffin with a handful of blueberries.
Bake in a preheated oven at 400C for ±15-20 minutes or until a skewer comes out clean.
Muffins will puff up substantially but drop slightly as they cool down.
I just had to try out my new blender and I also wanted to try a new GF muffin!! I have tried numerous over the last little while, but they never turned out as I hoped, and not worthwhile sharing.
Well, what do you know, tonight I found one with NO flour!! I slightly adapted the ingredients and measurements, but I am super stoked, it’s yummy!!!

This looks easy and delicious. I couldn’t find maple syrup in the place where I currently live in. Any alternatives that could work and still taste as good as this?
I think you should be able to use honey as well, although I have not tried it, only used maple syrup.
