Description
These Squares are packed with rolled oats, currants and coconut, with a lovely buttery sweetness from golden syrup. They’re easy to mix, simple to bake, and best cut into squares while they’re still warm, just like the old-fashioned homemade treats we love.
Ingredients
- 2 cups cake flour
- 3 1/3 cups rolled oats
- 1 1/4 cups currants
- 2 cups desiccated coconut
- 1 1/2 cups granulated sugar
- 1/2 tsp salt
- 1 cup (250 mL) margarine
- 2 1/2 tbsp golden syrup
- 1 large egg, beaten
- 1 tsp vanilla essence
- 0.4 tsp – 2 mL almond essence
- 1 tsp bicarbonate of soda
- 1 to 2 tbsp milk, as needed to dissolve the bicarbonate of soda
Instructions
- Preheat your oven to 350⁰F (180⁰C). Lightly grease a large baking tray, approximately 13 x 18 inches, or use two medium baking trays. Line with parchment paper if you want easier removal and cleaner cuts.
- In a large mixing bowl, combine the 2 cups cake flour, 3 1/3 cups rolled oats, 1 1/4 cups currants, 2 cups desiccated coconut, 1 1/2 cups granulated sugar and 1/2 tsp salt. Give everything a good stir so the currants are evenly distributed.
- In a saucepan over low heat, melt the 1 cup (250 mL) margarine with the 2 1/2 tbsp golden syrup. Stir until combined, then remove from the heat and allow it to cool slightly so it isn’t piping hot when you add the egg.
- Beat the 1 large egg in a small bowl. Stir in the 1 tsp vanilla essence and 2 mL almond essence.
- Dissolve the 1 tsp bicarbonate of soda in 1 to 2 tbsp milk. Stir until the powder has dissolved as much as possible.
- Add the beaten egg mixture and dissolved bicarbonate of soda to the warm margarine and golden syrup. Stir well. The mixture may foam slightly when the bicarbonate of soda meets the warm liquid.
- Pour the wet ingredients into the bowl of dry ingredients. Mix thoroughly until the oats, currants and coconut are evenly coated. The mixture should be moist enough to hold together when pressed. If it seems unusually dry, add a little milk, 1 tsp at a time.
- Transfer the mixture to the prepared baking tray or divide it between the two medium trays. Press it firmly and evenly into the tray using the back of a spoon or a flat-bottomed measuring cup. Pay attention to the corners so the squares bake evenly.
- Bake for approximately 30 minutes at 350⁰F (180⁰C), until the top is golden brown and the edges are a little darker. If using two trays, check them separately as they may bake at different rates.
- Remove the tray from the oven and leave it to rest for about 5 to 10 minutes. While the mixture is still warm, score or cut it into squares with a sharp knife. Let it cool completely before lifting out the pieces, as they’ll firm up as they cool.

Additional Information, Helpful Tips and Suggestions
- What size baking tray should I use? A large tray around 13 x 18 inches works well for thinner squares. Two medium trays can be used instead. Keep the mixture at an even thickness so it bakes consistently.
- How do I know when the crunchies are ready? Bake at 350⁰F (180⁰C) for approximately 30 minutes. Look for a golden brown surface and slightly darker edges. The squares will firm up as they cool.
- Why should I cut the squares while they’re warm? The mixture becomes firmer and more brittle as it cools. Score or cut it after resting for 5 to 10 minutes, then let the squares cool completely before lifting them out.
- How do I stop the squares from crumbling? Mix the ingredients thoroughly and press the mixture firmly into the prepared tray. If the mixture seems too dry to hold together, add milk 1 tsp at a time until it binds.
- Can I use butter instead of margarine? Yes. Use 1 cup (250 mL) butter in place of the margarine. The flavour may be richer, and the finished texture may differ slightly.
- Can I replace the currants? Yes. Raisins, sultanas or finely chopped dried dates are suitable alternatives. Keep the quantity at approximately 1 1/4 cups.
- Can I change the coconut? Desiccated coconut gives these squares their characteristic texture. Unsweetened shredded coconut can work, although the texture may be slightly different. Avoid very large coconut flakes, as they may make the mixture harder to press together.
- Can I reduce the sugar? You can experiment with reducing the 1 1/2 cups of sugar, but a substantial reduction may affect the sweetness, browning and texture. Try a modest reduction first.
- What can I use instead of golden syrup? Light corn syrup or mild honey can work, although each changes the flavour slightly. Golden syrup gives the squares their familiar caramel like sweetness.
- Why is bicarbonate of soda included? It helps with the texture and spread of the mixture. Measure the 1 tsp carefully and dissolve it in the milk before mixing it into the wet ingredients.
- How should I store the crunchies? Once completely cooled, keep them in an airtight container at room temperature for about 5 to 7 days. Store them in a cool, dry place and separate layers with parchment paper if needed.
- Can I make them ahead? Yes. Bake them a day or two before serving and keep them in an airtight container. Allow them to cool fully before storing to prevent condensation from softening the texture.
- Can I make the recipe without almond essence? Yes. Leave it out or replace it with an extra small splash of vanilla essence. The flavour will be slightly different, but the recipe should still work.
- What if the edges brown before the centre is cooked? Your oven may run hot, or the mixture may be spread too thinly. Check the squares early, use the middle oven rack and reduce the temperature slightly if needed.
- Can I use quick oats instead of rolled oats? Rolled oats are preferable because they provide more texture. Quick oats may absorb moisture differently and produce a softer, less textured square.

Oat and Fruit Crunch Squares bring together rolled oats, currants, coconut and golden syrup for a sweet, satisfying homemade treat. The straightforward method and familiar pantry ingredients make them an appealing choice for afternoon tea, lunch boxes or a tin of homemade biscuits. Bake a batch, cut the squares while warm and enjoy the lovely contrast of crisp edges and a slightly chewy centre.
