Description

Oh Henry Mint Crunch Krispie Squares bring together chewy Oh Henry! Bites, crisp puffed rice and little pops of glazed cherry. The mint chocolate topping and Hershey’s Hugs in the middle make these especially fun for Valentine’s Day.

Ingredients

Units Scale
  • ± 1 lb – 2 x 230 g bags Oh Henry! Bites
  • 3 cups puffed rice cereal
  • 1 cup mixed glace fruit, preferably with plenty of cherries
  • 3/8 cup – 85 g butter
  • 1 tbsp honey, optional
  • 10.5 oz – 2 x 150 g Cadbury Mint Crisp bars, or good quality baking chocolate
  • 20 Hershey’s Hugs Kisses

Instructions

  1. Line an 8 x 10 inch baking tin with parchment paper, leaving a little overhang on the sides so you can lift the finished squares out easily.
  2. Add 85 g butter, 2 x 230 g bags Oh Henry! Bites and 1 tbsp honey, if using, to a large microwave-safe bowl. Microwave for 30 seconds, then stir well. Continue heating in 30-second intervals, stirring after each one, until the chocolate and butter have melted. This usually takes about 1 to 2 minutes, depending on your microwave.
  3. Don’t worry if the mixture isn’t completely smooth. The nuts and other bits in the Oh Henry! Bites mean it will still have some texture, which is exactly what you want.
  4. Add 3 cups puffed rice cereal and gently stir until everything is coated. Add 1 cup mixed glace fruit last and fold it through gently so you don’t crush the fruit or break up all the puffed rice.
  5. Transfer the mixture to the parchment-lined 8 x 10 inch baking tin. Use the back of a lightly buttered spoon, spatula or your fingertips to press it firmly and evenly into the tin. Pressing firmly is important; otherwise, the squares can crumble when you cut them.
  6. For the topping, break 2 x 150 g Cadbury Mint Crisp bars into pieces and place them in a microwave-safe bowl. Microwave in 30-second intervals, stirring well each time, until melted. Cadbury Mint Crisp doesn’t melt as smoothly as regular baking chocolate, so if it’s too thick to spread, stir in 2 tbsp milk, one tablespoon at a time, until you have a spreadable consistency.
  7. If you’re using good quality baking chocolate instead, you probably won’t need the milk. Melt it gently in the microwave in 30-second bursts, stirring between each one, until smooth.
  8. Spread the melted chocolate evenly over the puffed rice mixture. Lightly mark the chocolate into 2 x 2-inch squares while it’s still soft, then place 1 Hershey’s Hugs Kiss in the centre of each square.
  9. Refrigerate or freeze the tin until the topping is firm and the mixture feels solid enough to cut cleanly. If you’ve frozen it, let it sit at room temperature for a few minutes before cutting so the chocolate doesn’t crack too much.
  10. Use the parchment overhang to lift the slab from the tin, then cut it into 20 squares. A sharp knife warmed under hot water and dried well between cuts will make the chocolate topping easier to slice.

Additional Information

  • What makes these squares hold together? The melted Oh Henry! Bites, butter and optional honey create the sticky mixture that coats the puffed rice. Press the mixture firmly into the lined tin while it’s still warm so the squares hold their shape once chilled.
  • Why isn’t the Oh Henry! mixture completely smooth? The nuts and other pieces in the Oh Henry! Bites give the melted mixture some texture. That’s completely fine. The important thing is that the chocolate and butter have melted enough to coat the cereal.
  • When should the glace fruit be added? Add the 1 cup mixed glace fruit after the puffed rice has been coated. Folding it through gently at the end helps prevent the fruit from being crushed or worked into one sticky mass.
  • Can I use glace cherries instead of mixed glace fruit? Yes. Glace cherries are a good choice if you want a stronger cherry flavour. Chopped dried cherries can also be used, although they’ll give the squares a chewier texture and less moisture.
  • Can I use regular chocolate instead of Cadbury Mint Crisp? Yes. Use 2 x 150 g bars of good quality milk, dark or semi sweet baking chocolate. Regular baking chocolate should melt more smoothly, so the additional milk generally won’t be necessary.
  • What if my Cadbury Mint Crisp chocolate is too thick to spread? Stir in up to 2 tbsp milk, adding it gradually. Mix well after each addition until the chocolate reaches a spreadable consistency.
  • Can I leave out the honey? Yes. The 1 tbsp honey is optional. It adds sweetness and a little extra stickiness, but the recipe will still work without it.
  • Can I make smaller squares? Yes. The recipe makes about 20 squares when cut into approximately 2 x 2 inch portions, but smaller pieces work well for dessert trays or parties.
  • How do I get cleaner cuts? Chill the slab until firm, then let it sit for a few minutes before cutting. A sharp knife warmed under hot water and dried thoroughly between cuts can help slice through the chocolate topping more cleanly.
  • Can these be frozen? Yes. Place the completely chilled squares in an airtight container with parchment paper between the layers and freeze for up to 2 months. Allow them to thaw in the refrigerator or briefly at room temperature before serving.
  • How should they be stored? Keep the squares in an airtight container in the refrigerator for up to 1 week. They can sit at cool room temperature for 2 to 3 days, but refrigeration keeps the chocolate topping and squares firmer.
  • Can another crispy cereal be used? Yes. Plain puffed cereal can replace the puffed rice, although the texture may be slightly different. Avoid strongly flavoured cereals so the chocolate, cherry and candy flavours remain the focus.
