A fresh gluten-free meal ready in minutes. One Egg Pizza Skillet is light, satisfying, and easy to customize with everyday ingredients.
Looking for a quick gluten-free meal? This One Egg Pizza Skillet combines Italian Tomato Chutney, melted cheese, and your favourite toppings for a simple meal that’s ready in under 30 minutes.
Additional Information
- Can this be frozen? The cooked omelet is best enjoyed fresh and isn’t ideal for freezing because the egg texture changes once thawed. The Italian Tomato Chutney freezes very well for up to 3 months in an airtight container.
- How long can this be stored and how? Italian Tomato Chutney: Store in an airtight container in the refrigerator for up to 5 days. Cooked Pizza Omelet: Refrigerate for up to 2 days. Reheat gently in a covered frying pan over low heat until warmed through.
- Can I bake it instead? Yes. Once topped, bake at 400⁰F (200⁰C) for about 6 to 8 minutes, or until the cheese has melted and the egg is fully set.
- Can I make the tomato chutney ahead of time? Absolutely. Making it ahead saves time and actually improves the flavour as it sits.
Substitutions
- Swap mozzarella for cheddar, Gouda, Swiss, or dairy-free cheese.
- Use red, yellow, or orange peppers instead of green pepper.
- Replace mushrooms with baby spinach or zucchini.
- Add cooked bacon, turkey, ham, or leftover roast chicken.
- Fresh oregano or parsley can replace dried Italian herbs.
- Avocado oil works just as well as olive or coconut oil.

- 1 tsp Italian herbs

Suggested Toppings
Instructions
Italian Tomato Chutney
- Heat 1 tsp olive oil or coconut oil in a small saucepan over medium-low heat.
- Add 1 finely chopped onion and cook for about 5 to 7 minutes until soft and lightly golden.
- Stir in 1/2 tsp crushed fresh garlic and cook for 30 seconds, just until fragrant.
- Add 3 grated tomatoes, 1 packet tomato paste, salt, black pepper, and 1 tsp Italian herbs.
- If the mixture looks too thick to cook evenly, stir in up to 1/4 cup water.
- Simmer gently for 12 to 15 minutes, stirring occasionally, until the chutney is thick, rich, and most of the liquid has evaporated.
- Allow the chutney to cool slightly before using. Any leftovers can be refrigerated.
Pizza Omelet
- Crack 1 large egg into a bowl and season with salt and black pepper. Beat until well combined.
- Heat 1 tsp olive oil or coconut oil in a non-stick frying pan over low heat.
- Pour in the beaten egg and gently swirl the pan so it forms an even round base.
- Let the egg cook for about 1 to 2 minutes, until the bottom begins to set but the top is still soft.
- Spread 2 to 3 tbsp Italian Tomato Chutney evenly over the egg, leaving a small border around the edge.
- Sprinkle over a light layer of 1/3 cup grated cheese.
- Add your chosen toppings, such as green pepper, onion, mushrooms, cooked chicken, steak, olives, or fresh basil.
- Finish with the remaining cheese and an extra sprinkle of Italian herbs.
- Cover the pan with a lid, switch off the heat, and let everything sit for 4 to 6 minutes. The trapped heat melts the cheese while keeping the egg tender.
- The underside should be nicely browned and lightly crisp.
- Carefully slide onto a plate and serve immediately while warm
