Ingredients
Batter
- 170g castor sugar
- 2 eggs
- 1/2 cup oil
- 1/2 cup plain yoghurt
- zest of 1 orange
- juice of 1 orange( about 2 Tbspn)
- 1 cup self-raising flour
- 1 tsp baking powder
- pinch salt
Topping
- 300 g tub of fresh cream
- 2 Tbspn sugar
- 1/4 tsp orange blossom water
Instructions
Batter
- Preheat oven to 180C/350F, and place cupcake cases into muffin pan.
- Cream together castor sugar and eggs, one at a time.
- Add oil, orange juice, and yogurt, and mix well.
- Add sifted dry ingredients.
- Pour batter 3/4 way up the cupcakes and bake until the cupcakes turn golden brown and the skewer comes clean.
- Depending on your oven and the size of the cupcakes, this can be up to 20 minutes
Topping
- Whisk all ingredients until the fresh cream is firm enough to hold onto the Whisk pedal.
